Smokey Tofu Jacket Potato
Ingredients:

220g firm tofu
-
1/4 cup low-sodium soy sauce
-
1 tbsp maple syrup
-
1 tbsp tomato paste
-
1 tbsp liquid smoke
-
1 tsp apple cider vinegar
-
1/2 tsp ground black pepper
-
1/4 tsp smoked paprika
-
1/4 tsp asafoetida
-
2 tsp garlic infused olive oil
-
Extra oil for frying or use air fryer
Method:

Drain tofu and pat dry.

Whisk together the remaining ingredients.

Thinly slice tofu and dip in marinade to fully coat.

Heat pan with enough oil to submerge tofu slices then carefully slide in pieces (stand clear, it will spit!) and cook for around 5 minutes. (Alternatively, air fry)

Flip the pieces and cook for another 5 minutes or until crisp, drain on clean towel.
