Ingredients:
170g+ tofu, cubed
Salt + pepper
Oil for frying
75g* common cabbage, shredded
1+ cup kale, shredded
1+ carrots, grated
1/4+ red capsicum, finely sliced
2 tbsp+ green tips spring onion
2 tbsp+ mayo

Method:
Pat tofu dry, season with salt and pepper and fry til crispy, set aside
Mix all other ingredients in a bowl until thoroughly combined, all ingredients except for the cabbage are "eat freely" so take care with your cabbage portion.
Stir in Tofu last and either set aside for the flavours to develop or serve immediately.
